I love to create my own recipes — either by imagining something completely new and different or by revising an old tried-and-true recipe to suit my current needs. Not only does it let me control what goes into the food that I eat, it lets me explore the qualities of each ingredient and how they work with each other in a recipe.
During one hot summer, I experimented with my own recipes for ice cream, and came up with some pretty good ones that had little or no sugar in them, including one I called "Lemon Pudding Ice Cream." I learned that by simply freezing a sweet warm custard it will double or even quadruple the amount of sweetness, and so it's very easy to reduce the amount of sugar in a recipe and still have a very sweet ice cream.
